Cut the celery into manageable bite sizes. Each stalk should be enough for at least two bites. Wash and pat them dry or leave to air dry. In order to make the celery flat on the plate, turn the curved end of the celery towards you and slice off about two strip lines thinly.
In the meantime, make the stuffing. To a bowl, add cream cheese, chopped chives, Greek yogurt, crumbled bacon, smoked paprika, salt and pepper. Mix until well combined. Transfer the stuffing to a piping bag or a Ziploc bag at an angle.
Snip off the end of the piping bag with scissors. Carefully pipe the stuffing into the celery sticks.
Arrange the stuffed celery onto a plate and serve.

Tips
Save yourself some time from chopping and cleaning celery stalks by buying pre-cut celery sticks from the shops. Customise the filling to taste. it is easily adaptable especially if you are serving guest that does not consume pork. The bacon can be swapped for shredded chicken. I love chicken buffalo dip with celery sticks. You should give it a try too.
Swap the full-fat cream cheese for a low-fat version or mix the full-fat cream cheese with some sour cream. Just be mindful so that it doesn’t become runny. The filling should be fluffy yet stable to hold its shape on the celery.
Leave out the bacon or other protein choice to make this recipe vegetarian. To make it vegan, simply use vegan cream cheese or other types of cheese available to you.
