Ingredients

  • ½ cup Olive oil
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • ½ tsp dried basil
  • ½ tsp red pepper flakes
  • 2 fresh garlic grated: substitute for garlic powder
  • Salt and black pepper to taste
  • Balsamic vinegar
  • 2 tbsp freshly grated parmesan cheese: substitute for pecorino

Instructions

  • To a shallow bowl, add olive oil, oregano, basil, red pepper flakes, thyme, salt and pepper and mix to combine. Leave for at least 30 minutes for the flavor to develop. You can serve the dipping oil without parmesan cheese or balsamic vinegar.
  • For additional flavour, add balsamic vinegar, grated parmesan cheese and stir to combine. These two additional ingredients give the oil an instant boost in flavor and can be served immediately without resting.

Notes

  • Use the highest quality cold press olive oil or extra virgin olive oil you can find.
  • If using fresh herbs, make sure it is finely chopped. It gives a pleasing look to the eyes this way and will coat the bread easily too.
  • While dipping oil is quick and easy to make, it is best to make just the oil and herbs ahead of use so the oil is infused before serving. Any other ingredients you may want to add can be added just before serving.
  • Slice the baguette into smaller pieces before serving to avoid cross-contamination or food wastage.
