Air Fryer Baked Avocado Eggs

Baked avocado egg! If you love low carb breakfast without a fuss then you will love this air fryer avocado egg recipe. You only need 4 ingredients and less than 10 minutes to make this delicious healthy, keto-friendly breakfast.

Ingredients
  

  • 1 avocado
  • 2 eggs
  • Salt and pepper to taste
  • Fresh dill to serve

Instructions
 

  • Preheat your air fryer to 160C/320F.
  • Cut the avocado in half, remove the pit and scoop out some of the flesh into a bowl to make enough well to fit the egg.
  • Place the avocado halves into a small baking dish that is will fit into your air fryer basket, season the cavity of the avocado with salt if you desire.
  • Gently crack an egg into each avocado well and season with salt and black pepper according to taste.
  • Air fry the avocado egg at 160C/320F for 6-8 minutes until the egg white is fully set and the yolk is cooked. If you want the yolk a little runnier then cook for about 6 minutes.
  • Sprinkle with chopped dill and serve immediately with the remaining scooped avoacado flesh, enjoy!

Oven instructions

  • If you don't have an air fryer, you can bake the avocado eggs in the oven at 200C/400F for about 10-15 minutes.
