How to tell when lamb is cooked?Your best kitchen appliance when cooking any type of meat is an instant thermometer. This will ensure you cook your meat right every time. As a rule of thumb, the internal temperature of cooked lamb is 60-65C / 149F for medium-rare, 65-70C / 158F for medium, and 70C/158F for medium-well done. You can also do the finger test but I highly recommend using an instant thermometer as you won't need to second guess the result.
