Ingredients
  

  • 1 lb ground chicken
  • 1 large egg
  • 2 Tablespoon full fat mayonnaise
  • ½ cup parmesan cheese grated
  • ½ cup panko breadcrumbs
  • 1 ½ teaspoon dried thyme
  • ½ teaspoon rosemary
  • Salt and pepper to taste

Instructions
 

  • In a large bowl add ground chicken, egg, mayonnaise, breadcrumbs, rosemary, thyme, parmesan cheese, salt, and pepper, and mix to combine using your hands.
  • Preheat the air fryer to 400F / 200C for 5 minutes.
  • Using a small ice cream scoop, divide the mix into 12-16 portions and roll them into meatballs. Place the meatballs on a plate until you have exhausted the mixture.
  • Spray the air fryer basket with cooking oil, and arrange the meatballs in the basket in a single layer.
  • Cook the chicken meatballs until golden brown on the outside for 10-12 minutes or until the internal temperature reaches 165F/74C. Make sure to shake the air fryer basket halfway through the cooking time to cook the meatballs evenly.
  • Serve as is or with marinara sauce or any other dipping sauce of choice.
