Why you will love this recipe
This crispy boneless chicken is my go-to on a busy weeknight, especially when we are having a rice bowl. I love that it is versatile and can be seasoned to whatever flavor profile we fancy that night. It is also pretty easy and quick to make.
To make this meal very economical, I debone the chicken thighs myself, which saves me some money. This recipe is family-friendly, and even your picky eaters will ask you for more servings.
If you don't own an air fryer, you can also cook the chicken on a grill, in the oven, or on the stovetop.

What you will need
Skin-on boneless chicken thighs: Substitute with bone-in chicken thighs and adjust the cooking time accordingly.
Ground ginger
Cumin
Ground coriander
Hot paprika
Onion granules
Garlic granules
Baking powder
Olive oil cooking spray
Salt and black pepper

How to make crispy boneless chicken thighs in air fryer
Preheat the air fryer to 400F/200C for 3-5 minutes
Make the seasoning: in a small bowl, add ginger, cumin, hot paprika, onion granules, garlic granules and mix to combine. Divide the seasoning mix into 2 portions, and add baking powder to one portion. Mix to combine, and set aside.
Season the chicken: Arrange the chicken on a plate, skin side down and season with salt and black pepper. Sprinkle half of the seasoning on the chicken and rub it all over it. Flip the chicken, season with salt and pepper and sprinkle with the remaining seasoning (with the baking powder). Pat down with your fingers so it adheres properly to the chicken.
Air fry: Place the chicken thighs in the air fryer basket in a single layer, skin side down and spray them lightly with cooking oil. Air fry for 20-22 minutes, flipping halfway through, or until the internal temperature reaches 165F/74C.
Transfer the cooked chicken thighs to a plate and rest for a few minutes before slicing so that the juice can redistribute back into the chicken.
Garnish with chopped fresh herbs for freshness. Enjoy!

How to store
Leftover chicken can be stored in an airtight container in the refrigerator for up to 4 days or frozen for up to 3 months.
Reheat in the air fryer at 360F/180C for 3-5 minutes or in the microwave until warm through to your liking.
