    Easy mini sausage rolls recipe

You have been making sausage rolls in the past but this recipe is a game-changer. It is the best ever and whoever you serve them to would thank you for it. I bet they would not be able to stop at one. Greggs has got nothing on this recipe, this homemade version of the British and Irish classic is giving any shop-bought a good run for its money.

The flavors from the sausage meat and the flaky buttery puff pastry is insane. Your kitchen will be filled with a delicious aroma. Making them bite-sized makes them perfect for every occasion. I mean, everyone loves a good sausage roll! Easy to pick up and would minimize waste too.

The best part of making these rolls at home yourself is that you can put your own spin on it. Add any spices of choice, you can even sneak in a vegetable or two. No one would know, it will all be forgiven when each bite is bursting with flavor from the buttery pastry and sausage meat.

Let me show you how to make the best homemade mini sausage rolls in puff pastry like a pro.

    Fun fact

Americans may know sausage rolls as a pig in a blanket but they are two different things. Pig in a blanket uses hot dog. If you are an American reading this post, don’t be deterred from trying it, on scout’s honor, you will love it.

    Ingredients

Ready rolled puff pastry: this can be found in the fridge section where you will likely find butter and cheese. If you are feeling adventurous, you can make your own puff pastry. Trust me, you really do not need to, as most store-bought puff pastry tastes amazing.

    Pork Sausages

Egg: you need this to egg wash and seal the puff pastry. That said, you can also seal the puff pastry with water, I prefer to use egg since I will be brushing the top of the sausages with it anyway.

Onion Powder: Substitute with chopped onions

Chili seasoning: this is different from cayenne pepper or red pepper flakes. Chili seasoning is a combination of spices. You can use any seasoning you like to make it your own.

    Black pepper

Poppy seeds and sesame seeds to garnish.

    ingredients.

    Variations

Add herbs and spices of choice but if serving this to a crowd, put them first by considering their dietary needs. Sage, fennels and thyme are the most commonly used spices added to sausage rolls

Any sausage meat would work for this recipe, read the ingredients on the package and customise it to taste. Check the salt content on the packet before seasoning the meat.

How to make the best homemade mini sausage rolls

    Preheat the oven at 180C/365F

Remove the casing (skin) of the sausages and empty the meat into a bowl, add smoked paprika, chilli powder, onion powder, black pepper and mix to fully combine. You can add a dash of hot sauce but if doing so, please mix the meat with a spoon or wear gloves.

Roll out the puff pastry on a lightly floured work top or on the parchment paper and cut into two length wise to make two smaller rectangles.

Divide the mixed seasoned sausage meat mixture into two. Spread the meat in the middle of the pastry, lightly whisk the egg, and brush on one side of the pastry. Fold the pastry over the meat so the two edges meet. Pinch the edges with a fork to seal. Repeat for the remaining pastry and meat, you will have two long logs at this point. Trim off excess pastry

Using a sharp knife, cut each log between 8 to 12 pieces. Transfer the mini sausages to a lined baking tray making sure they are not touching and the pan not overcrowded. Make an incision on the sausage rolls and egg wash.

Place in a preheated oven and bake for 20 to 25 minutes until the puff pastry puffs up golden brown. The internal temperature of a cooked sausage should read 160F/63C

Take it out of the oven, leave it to cool before serving, it can be enjoyed warm or cold.

    How to store

Once completely cooled, these mini sausage rolls can be stored in the fridge for up to 3 days.

To reheat: Do not use the microwave as the pastry would go soggy. Reheat them in the oven or air fryer until warm enough to your liking.

Freezer: for best result, freeze the sausage rolls in the freezer for up to 3 months before baking in the oven. Leave to thaw in the fridge overnight before cooking, cooking directly from frozen might result in false cooking. You want the sausage meat to be completely cooked before serving.

    Recipe tips and notes

    • Frozen pastry should be thawed before using, best left in the fridge overnight.
    • If the pastry is hard to work with, place it in the fridge for a few minutes or in a freezer for a minute or two. Store-bought pastries are not the best to work with so you need to be fast when using it.

    What to serve it with

You can eat this on its own but it is also great with the following dippers.

    Fry sauce

The good old ketchup or bbq sauce

    Honey mustard sauce

    Stuffed celery bites
