Pita bread: I used pita pocket and I don’t open it up as I prefer thick chips, honestly, it tastes better than when opened.
Olive oil: substitute with any other flavorless cooking oil of choice
Dried oregano
Garlic powder
Salt and pepper

The best part of making these chips at home is that you can customize them to taste. You can have individual batches of the chips flavored to taste. From the Mediterranean, Mexican, Italian, Spanish, whatever you want. As long as you have the spices or herbs then you are in control. Make it mild or hot and you can even have both options.
Za’atar seasoning is a popular option but feel free to make this your own.

How to make homemade pita chips
Preheat the oven at 180C/365F.
To a small mixing bowl, add olive oil, oregano, garlic powder, salt, and pepper then mix to combine.
Using a pastry brush, brush the seasoned oil on both sides of the pita bread then stack as you do so.
With a sharp knife or pizza cutter cut each bread into 8 equal triangles. if you would rather have thinner chips then split the bread into two, brush with oil then cut into triangles.
Arrange the pita bread on a baking tray in a single layer and bake in the preheated oven for 10 to 12 minutes flipping it halfway for a good measure. Reduce the cooking time for thinner chips.
Let the chips cool completely before serving.
How to make pita chips in the air fryer
It is the same method as baking them in the oven.
First, you season, oil, and cut pita bread into triangles. It is not necessary to spray the air fryer basket with oil if you have already brushed oil on the bread.
Arrange the triangles on the air fryer basket in a single layer and cook for 8 minutes at 190C/380F, 5 minutes for open pocket chips. Flip or shake halfway for even cooking.
Serve with any dip of choice when it is completely cooled.

I made these to dip into my homemade garlic hummus. I only had 6 pitas. So I filled my 1/2 sheet pan and had about 6 triangles that did not fit. I did those in my Cuisinart air fryer( this unit runs hot) so only set at 375.They were done in 5 and a bit too crisp,
But not burned. They rest in the oven I watched like a hawk, added time, rotated and did flip once. These are perfect and well worth the time!
