    Pesto Mayo

    A creamy and delicious mayonnaise-based condiment, this pesto mayo uses just two ingredients. You can either make both the mayonnaise and pesto from scratch or use a quality store-bought brand for convenience.

    This pesto mayonnaise recipe is creamy, and delicious, and can be used as a dip with fries, crudités, or as a sandwich spread/grilled cheese (my fav).

    This creamy condiment is prepared using my famous homemade basil pesto, it is easy and quick to make and tastes better than store-bought. That said, when I am too lazy to make fresh basil pesto sauce, I always turn to Salca pesto or the Aldi (low salt) brand because they are both convenient and flavor-packed.

    What makes this recipe great

    • Mayo pesto is versatile and can be used in so many different ways, it is perfect for dipping or as a sandwich spread. You can add more or less pesto to taste, and you can also switch up the type of pesto you use, however, I would always recommend basil pesto or sun-dried tomato as it's more flavourful than its counterparts.
    • It can be made ahead of time and it stores well in the fridge for a few days.

    What you will need to make this condiment

    You only need these two ingredients

    Full fat mayonnaise: any good brand would do, make sure it is of high quality since that is the base of this recipe. Yes, you can use low-fat mayo if you prefer.

    Homemade basil pesto or a quality store-bought brand

    Quick overview of how to make your own basil pesto sauce

    To a food processor, add fresh basil leaves, pine nut, and garlic and blitz for about 10-15 seconds to combine. Add grated parmesan cheese, and olive oil, season with salt, and freshly ground black pepper a good pinch of both. Blitz again until smooth.

    That's it! So easy and so much better than anything you can buy at the store.

    If you want to make this ahead, simply store it in a glass jar with a tight-fitting lid and refrigerate it for up to 5 days. It can also be frozen and you can store it in the freezer for up to 3 months. Leave to thaw in the fridge for a few hours before use.

    How to make pesto mayo

    To make the pesto mayonnaise, simply mix together the mayonnaise and pesto then mix to combine. I like to use a ratio of 1 cup mayonnaise to ⅓ cup pesto, but you can adjust this to your own taste. You can start with less pesto and continue to adjust until your desired taste is achieved.

    How to store

    Store any leftovers into an airtight jar and keep it in the fridge for up to 5 days. No, you cant freeze this condiment as the mayonnaise will separate when thawed.

    Tips

    If you want to make your own mayonnaise, then I recommend using a good quality olive oil. It will give the mayonnaise a lovely flavor.

    Can I make my own mayonnaise

    To make the mayonnaise, simply whisk the egg yolks, mustard, and vinegar together in a bowl until they are combined. Then, very slowly pour in the olive oil while whisking constantly. The mixture will start to thicken and become creamy. Once all of the oil has been added, season to taste with salt and pepper. This is a great homemade mayonnaise recipe you should try if you have 10 minutes to spare

    Is this recipe nut free

    This recipe is not nut-free as it uses pesto that contains pine nuts. However, you could make your own nut-free pesto by using seeds instead of nuts or leaving them out altogether.

    Can I make this recipe vegan

    Yes, you can make a vegan version of this recipe by using vegan mayonnaise and making your own pesto with vegan parmesan cheese. I have heard a lot of good things about Follow Your Heart brand that is creamy and has a good flavor.
