Air fryer potatoes and onions
My version of diced potatoes and onions in the air fryer is very simple. You only need a handful of ingredients to make this at home from scratch and nothing from the packet. I seasoned the potatoes with storebought lemon pepper, and some salt and air fried them until fork-tender before adding the roughly chopped onions. I continued to cook the potatoes with the onions until crispy and fluffy.
These spuds and onions were cooked in my Instant vortex 5.7L (1700) to perfection and I didn't have the need to parboil the potatoes. That said, any brand of air fryer would work for the recipe. Let me show you how to make in easy steps.
This recipe is naturally healthy, gluten-free, vegetarian and vegan.
Ingredients
Potatoes: the best potatoes to use for this recipe are Maris Piper, Yukon gold, Russet, or red potatoes. Cut them into even-sized cubes for even cooking.
Lemon pepper seasoning: you can use any other seasoning of choice. For the classic version, use rosemary, salt, and pepper.
Yellow onions
Garlic granules: substitute with onion powder
Olive oil: any other flavorless oil will work for this recipe
Salt to taste
How to make potatoes and onions
Scrub the potatoes clean under cold running water, cut them into small cubes, add to a colander and rinse with cold water. Drain and pat dry with a kitchen paper towel and transfer into a large mixing bowl.
Preheat the air fryer at 190/375F for 3 minutes
To the bowl of the potatoes, sprinkle the lemon pepper seasoning, garlic granules, and some salt, drizzle 1 Tablespoon of olive oil and toss everything together until coated.
Transfer the potatoes into the air fryer basket or tray, making sure not to overcrowd it. Cook for 12 minutes at 190C/375F, shaking the basket halfway through the cooking time.
In the meantime peel and roughly chop the onions, and add it to the same bowl you used for the potatoes. Season the onions with lemon pepper, and salt, drizzle the rest of the olive oil, and stir so that the onions are well coated.
After 15 minutes, remove the air fryer basket or tray. Add in the chopped onions and give everything a good mix. Spread the potatoes and onions out evenly in the basket/tray and cook for a further 5-7 minutes or until nicely browned and crispy. The onions should be soft, translucent, and slightly caramelized at this point too.
Serve immediately with your favorite dipping sauce. Enjoy!
How to serve
You can serve potatoes and onions as you serve any potato side dish. It can be served as a breakfast, brunch, lunch, or dinner. It is delicious on its own as a snack or appetizer with your favorite dipping sauce, I love it with pesto mayo. So versatile, it also goes well with grilled, stuffed mini peppers, chicken, lamb, steak, or fish.
Storage instructions
Leftovers can be stored in an airtight container in the fridge for up to 3 days and reheated in the air fryer or oven or microwave when ready to eat. To reheat, simply cook in the air fryer for 3-5 minutes at 180C/350F.
Tips
- Make sure to cut the potatoes into even-sized cubes so that they cook evenly.
- Do not overcrowd the air fryer basket/tray as this will result in uneven cooking. If you have a lot of potatoes, cook them in batches.
- If you want softer onions, cook them for longer with the potatoes. Also avoid, cutting the onions too small as they burn rather than caramelize.
- Use any other seasoning of choice. For the classic version, use rosemary, salt, and pepper.
- You can also cut the spuds into wedges if you prefer.
- Check if the lemon pepper seasoning you are using already contains salt or not so that you can add accordingly.
